Chocolate Mocha Cake Recipe
This is a very simple chocolate mocha recipe that my kids love to make.
There is nothing fancy about this recipe, except the taste.
Anyone can make this recipe, simply put all the ingredients in a bowl, mix thoroughly, pour into a pan and bake – that is all.
No separate mixing, no prepping— just mix everything in one bowl, pour into any cake pan, and bake. Top with anything you like or nothing at all.
2 cups Flour (all purpose)
2 cups Sugar (granulated)
2/3 cup unsweetened cocoa powder
1/3 cup vegetable oil (or coconut oil)
1 cup milk
2 tsp Baking SODA
1 tsp Baking POWDER
1/2 tsp Salt
1 cup hot coffee (brewed or 1 cup hot water with 1 tbs instant coffee mixed)
Preheat oven to 350°f
Grease and flour cake pan. I prefer to grease my pans with shortening and then flour them, but you may use spray or your preferred method.
Mix ALL ingredients in a large bowl. Note: it is best to sift the dry ingredients.
If using a hand mixer, mix at high speed for at least two minutes. MIX WELL.
Pour cake batter in cake pan or cup cake liners.
Bake for approximately 35-40 minutes. Cake is done when knife or toothpick inserted in the middle comes out clean.
Cool on rack, ice and serve,
I make this cake in Bundt cake pans, 9 inch round pans for a layered cake, 9 x 13 baking pan, and cup cakes.
It’s a simple and pretty universal cake recipe that is hard to mess up. Any glaze, icing, or frosting will work with it. The last time I made this cake (last week), I put cocoa glaze frosting with sliced strawberries on top.
Here is one variation of cocoa icing I often use:
2 tbs softened cream cheese (you can use margarine or butter instead)
1 tsp vanilla extract
1 cup powdered sugar (more or less powdered sugar, depending on the thickness you like)
3 tbs unsweetened cocoa powder
few drops of milk (liquid vanilla coffee creamer makes it richer)
